You want your shop to branch out in classes, but not sure what to offer. You heard Martha's back, yet you think your customers aren't into heirloom sewing, as you're a quilt shop. Face it, most new sewers (in the 18-30 age range) are often Cosplayers, not quilters. Yet many heirloom techniques (as well as quilting) are valuable sewing skill resources. After all, even Superman had to learn how to applique (to put that "S" on his costume!).
